If they replaced the thermostat they may have put in a 195 where you may have previous had a 185 or 190 degree. The one in the first image is the EVAP line from the fuel tank to the canister, one line should run under the battary tray and into the car for the cruise. It is possible the oil pressure switch is the source of the leak and the oil light is a symtom of the failing oil pressure switch. Agreed, start with vacuum leaks as this is a vary common failure on these cars and a lean A/F ratio will drive combustion chamber temps way up and NOx will increase. Ideally I need to see a pre-cat test result to really tell where you might want to look next. A high HC, and CO reading could be both lean misfire or rich induced and the tell tale factor's will be the Oxygen and Carbon Dioxide levels in the exhaust BEFORE the cat has a chance to convert these gases...

Not sure about the light, but the pedal issue sounds very much like unwanted ABS engagement, though warped rotors cause similar symptoms but without the pump motor sounds.
