Yea, I get that sound too when the pads and discs are wet (or is it the wash detergent?). I got new pads less than a year ago.
By polishing, do you mean resurfacing? I've heard it's not good practice to surface brake discs because the discs may end up warping.
By the way, I also have another sound coming from the discs - it makes a brief screech per revolution of the wheels (varies with speed), audible below 40 km/h. When the brake pedal is briefly depressed, the sound disappears. Also, I don't think I hear this until the pads are warmed up (i.e. usually I hear it during the last part of my journey). Any ideas on what's causing this sound? wear detector?

That sounds like the wear indicator. I have the passenger-side rear pad doing that now.
The disc should be resurfaced once in a while to correct small warping and even out spots that are more worn than others. But it is true that if done too often or too agressively it can prematurely wear down the disc, making it easier to warp.
