Does anyone know if the tube method down the dipstick remove ALL the transmission fluid? Even from the torque converter?
Vadis discusses a method of removing one of the hard trans lines and putting a tube on it to drain out the old fluid.
Has anyone had experience with a shop's transmission fluid change methods?

The car must be running to pump the fluid through. Usually a drain is done first so the fluid in the sump is fresh. Technically if you pour enough fluid in the unit while pumping it out you will eventually have 100% replaced. Industry standard is that 90% and up is a suitable flush.
Without the car running you can not drain all of the fluid out of the cooler return line or cooler output line (some is still in the TC).
