Here are some of my favorites:
For fusion Jazz Pat Metheny is the MAN I actually saw him play at at high school talent show back in the '70s.

Love your #2 pick.
And of course you can't forget some of the great Jazz piano artists.
Here are a few of my favorite jazz bands.
The Rippingtons have a LOT of great, catchy songs.
Most of Spyro Gyra's 80's music was very good. The newer stuff is meh.
Dave Koz is a great sax player. I grew up on Kenny G. but this is one of my favorite jazz albums.

Spyro Gyra's Morning Dance and the Shaker Song are some of my favorites. Thanks for the heads up on the Rippingtons. That is the most guitar talent I have seen that didn't come through King Crimson or YES. I would love to see a guitar off between Pat Metheny, Russ Freeman and Steve Howe.
If you study King Crimson everyone who was anyone came through King Crimson beyond the Beatles and the Rolling Stones.
There is a great interview with Greg Lake (Edit, my bad - it was Chris Squire) talking about when he opened for Jimmy Hendrix on YouTube (he initially thought he sucked).
Steve Howe would be the ugliest but I would put my money on him strumming the strings.
To the original theme, I think there is a ton of Jazz roots in the talented rock guitarists.

I listen to a lot of metal that incorporates jazz elements, but I don't listen to much actual jazz. I can definitely appreciate it though. The love and dedication of the musicians really shines through, and that's very important in any art.
