I may have a spare ECU from a 94 850 turbo kicking around, would there be any risk/benefit in trying that to see if there is anything wrong with the ECU? I'm also going to try bypassing the fuel filter in case it is plugged and causing a low pressure situation, but that will have to wait until it is light out again.
As far as I am aware the IAC is functioning fine and in my experience this wouldn't lead to the initial stall at driving speed.
As an aside I recently did the PCV and have driven over 600+ km since then without issue. I have checked and double checked all that work including vacuum lines and hose connections. To my knowledge everything looks good.

that's what I figured but thought I would ask anyways. Thanks for the heads up on the video but I have already checked that out and tested everything that I can. There is nothing much else that I can do tonight without proper lighting so I will have to go back at it again tomorrow morning. I'll post back with anything that I find. The valve itself won't cause grief at speed but the master fuel system relay (the gray one on the fan shroud) that turns the valve on also provides power to the fuel injectors. Looks like I have fuel to the rail but i am not sure if the injectors are firing, the plugs appear to be slightly wet after turning it over without starting (hard to tell but i can smell fuel). I am getting 6v at the injector in key position II but this does change when i try to start it. What voltage shoild i be getting to the injectors on startup? I'd try a swap on the cam and crank sensors. Check your distributor cap too in case the little center piece fell out. Old cap and rotor? Change 'em.

Check to make sure your battery cable is not rusted through where it crosses the front crossmember frame down low near the starter. PITA to access, and can look connected, but moving the actual cable can tell a very different story. Mine was corroded through and stranded me a few times before I figured out what the problem was. Worth checking if you haven't already.
