My '00 S70 T5M should have 5 blue fuel injectors, but instead it has 4 blue and one very new looking orange (brownish?) injector. What say you all? Should I swap out that brown for a blue? Does anyone have info regarding different color injectors?

Color is correlated with injector flow rate. 99+ turbo cars should have blues. I don't know if any other colors could potentially match, but used injectors aren't that expensive.
Take the opportunity to buy new o-rings, pintle caps, and filter baskets. You're probably gonna break at least one pintle cap and o-ring taking the things out anyway.

310 cc (orange) - all 850 turbos (T5, T5-R)

I don't know what color the newer LPTs have.
I would get another blue from the yard, that cylinder may be running a little lean.

For pintle caps and baskets a favorite source on the forums is Mr Injector on eBay, or if you take the injector in to NAPA (or perhaps most stores) they will have or can order the appropriate parts.

Local yards didn't have any blue injectors. I bought a reman Injector and the o ring, pintle, basket kit off ebay

Just a follow up...
Since putting in the single blue injector, and NOT installing the new O ring kit, my fuel mileage has increase by just short of 2 MPG. I was not expecting that, but an happy with the results. 27 MPG
