Do the factory manuals publish spec curves for these kind of sensors? When I refreshed my Mercedes 190e I found nearly all of the sensors to be bad in the way @abscate mentions above. They appeared to function but were non-linear. I typically tested them in boiling water with my meter connected and compared to the published curves.
