The seasoned chef also knows when exact or near exact measurements need to be followed, and understand how to fiddle with recipes/substitutions to accomplish a specific goal without haphazardly ruining the pot.

I have a friend who works in an Italian joint in Chicago - he can whip up this broth based pasta sauce similar to alfredo, but lighter and tastier. I know what goes in it...chicken broth, garlic, olive oil, butter, heavy cream, salt, white pepper, sautéed mushrooms and sun dried tomatoes. He can whip it up with his eyes closed just dumping stuff in and it's perfect every time. I can't seem to master it. But I can make grandmas german style chicken and noodles, literally I had my grandma show me how to make it before she passed some years ago... home chicken stock by simmering chicken.. debone, add papperika, garlic, minced onion, salt & pepper by eye and taste then simmer in the egg noodles that my friend says he's tried to make but get it quite right. Seems the two of us differentiate by cuisine-- my friend knows Italian that I sometimes have trouble with. I know northern European/German traditional stuff.

I thought I added this to this thread long ago, but apparently my bipolar flared up.

Best addition to my toolboxes, in my main and all the small car kits..

A 12 inch solid,non-ratcheting breaker bar.

With no ratchet I get a much better feel for how the fastener is releasing. If it starts deforming, I stop and apply heat and lube before it snaps off. My broken fastener count is down 90% since I use this tool

The 12 inch length gives you enough torque so that you can control the pull and feel at the same time. A 24. Inch is even better , but then you can have swing trouble.

It’s a perfectly good car weapon.

Only time i use a torque wrench is when I bolt down a head.
Oh, also when i tighten the vvt hub torx.
