Which of the two videos posted above would be the better choice to get all of the old fluid out and replaced with new fluid?

Use the steering wheel method and attach the hose at the pump reservoir inlet hose. I prefer the steering to pressure the fluid out rather than passively trying to pull everything out. I'm not so sure it can really pulling everything out. That video was reference for the hose connection. Happen to see it for the first time and was what I was trying to convey.

Check to see if there is a capacity in the manual and if not I believe two quarts should do it if the hose is not too long. Perhaps 3 quarts just in case. You should be able to see the fluid color difference to know you circulated all the old stuff out especially when it is coming out of the inlet hose to the reservoir.

in regards to system flushing, ive never done it, i would think it only needs to be done if you suspect there are pieces of debris in there otherwise i think its overdoing it. In my opinion the power steering system isnt all that important as long as it doesnt leak.

In states Pentosin CHF 11S or its replacement
CHS 202, both green. 11S in green can 202 in
white can. Advance auto has them both, pricey,
yes. I believe they can be mixed, I think it took
a little over 2qts. for a full flush.
