I’m about to give up on the car.
Car was running fine previously. Did notice a dip in fuel mileage at the last fill-up, but no apparent issues were present.
Then I was sitting at a stop light, radio on, AC on and the car stalled out. I managed to restart it, basically all the lights on and car was in limp mode. It then stalled at the next stop sign. I got it started once more, but it puttered out and hasn’t started since. The car will crank.
So far I’ve:
-Cleaned and and a friend test the MAF sensor. The voltage changes with air intake, so I assume it’s working.
-Replaced the VR on the alternator
-Replaced the fuel pump relay
-Replaced the battery
-Replaced both Cam and Crankshaft position sensors
The car already had a new ECU and ETC paired and programmed when I bought it, so I don’t think they are the issue.
I haven’t gone the immobilizer route, since the car won’t start at all, and I’m tired of putting new parts on this.
My basic OBDII scanner isn’t getting any codes.
Any hunches? I love my wagon, but I am at my wit’s end.

You don't mention if the fuel filter or fuel pressure has been checked? For your car it should be 50+ psi, mine is nearer 60 psi.
Not sure how you test a MAF. It may be showing readings but are they correct? You need a junkyard one to try, as Volvo is the only other option. Bosch has stopped selling them.

There is another relay on top the radiator that will cause a no start. Not the 3 plug fan relay. A square grey single plug one on the other side.
Probably not related to your no start but the temp sensor in the thermostat housing will cause fuel economy to drop off it it is failing.

Sounds familiar. You should get a P1670 if you try to start it enough times and it is the immobilizer. First thing I would try is pulling the antenna ring off the ignition and measuring it to see if its 5 ohms across the two inner pins. Also if you have another key try both of them.

No start and cranks ... Always start with starter fluid or equivalent first. Spray into vacuum hose off of intake. If it starts for a second or two and stops, fuel issue else check for spark. Report back with findings.
