Help!
Volvo XC70
I was cleaning the latch of the boot and I've accidently managed to 'close it' so that now when I try and close the boot, it cant/wont as its a complete circle - if that makes sense.
Please please help (damsel in distress) I need to drive the car tommorow and need to figure out how to undo what i've done. Ive tried to unlock it using the key but its not working
Boot latched closed and so i cant close the boot/tailgate

I think I can visualize what you have done. I have done this also in the past.
Is the 'closed latch' on the boot? If the key or lock button won't unlock the catch, the lock may only be in the first step of the two stage locking.
Try to use a screwdriver or other tool (you don't want your fingers pinched) to push the locking barbs further in. If they will engage further, the lock was in only the first stage of latching.
Now you may be able to unlock using the key or the unlock button.
If this does not work, post photos if the boot and catch parts on the car body.

Does the boot just make a clatter noise when you try to close? And then does not catch and you can just lift the boot up with out resistance?

I had an issue on our son's Xc70 similar to this. I thought my wife was doing something unintended to cause this. However, in our case the latch had broken internally. I replaced with a a new one (I reckoned at 16 years old it had done' it's lifecycle). Once the car was back in use I took the old one apart and found a broken piece that I was able to repair so I now have a spare should it be needed in the future.
I was able to get it to work occasionally by doing what volvolugnut mentioned so the the tailgate could close. It was only a temp fix until a new part arrived.
