This test to check if you have exhaust gases from the engine/head gasket leaking into the coolant as this will pressurize the coolant system and cause the fluid to overflow.

How long have you had the car?
If the car runs low on coolant, because it is pushing the coolant out of the reservoir, it may overheat and not show it on the gauge because there is NO coolant on the sensor.
