Or even put a screwdriver perpendicularly between the two wrenches at their free extremity and 'twist' the screwdriver.

Thanks for asking. It's been a while since I did the brake line job but my memory is that I could put the wrenches on the fittings so that the loosening of the flare nut was accomplished by squeezing the handles of the two wrenches into alignment in the palm of my hand. The same effect would occur if you use two hands but it seemed easier to do it with one hand. The main point is to keep firm pressure on the fixed nut and apply the turning force mainly to the flare nut. Be sure to have applied penetrating fluid well in advance.

Like a lever...turning the 11mm flare nut against the 14mm fixed hose connector. Very interesting!
