Alrighty, I'll try and get those off. Once they are, I'm guessing the whole pickup tube will slide out, exposing the famed O-rings?

Well tried that... there's just no room to work with, even with the pan sagging about 6 inches. Doesn't help that everything's oily... duh.
Plus, if the only way I can get the pan off is with the pickup tube off, that will really complicate re-installation when I have the sealant ready to go.

The pan only needs to go down an inch to get them out. This is the easiest way to get it out. a closed end wrench or gearwrench is perfect here.
Wipe up any oily mess so you can see what you are doing. Take another look around. Are you saying the pan is down 6 inches and you can't clear the oil pickup and get the pan out. Raises the question "Is everything disconnected"
If it is, I am betting you are trapped on the oil pump side. If the lower mount is collapsed then you may need to lift the motor a bit.
Try jacking it up with an engine lift or from the bottom with protection for the gasket surfaces.

Don't worry about installation right now. Do what you have to to get it out and then you can learn the best way to get it in for your car.
The worst would be you having to touch up the pan gasket before you put it all the way up.
By checking clearances before reinstallation and lifting the motor as needed you won't even have to do that .

The driver's side of the pan is lowered about 6 inches from the block. The passenger's side goes down about an inch or so. Looking inside the pan (from the driver's side), I'm able to see and feel by moving, that the end of the pickup tube is stuck in the hole.
I can see the two supports for the pickup tube, but viewing from the driver's side, the tube itself is in the way, making the bolts "on the other side".
I think my mounts are fine, and I tried jacking it all up on the transmission with some wood, but it only seemed to lift the car....

I'm wondering if jacking on the trans side lowers the oil pump side making it harder.
If removing the jack on the trans side doesn't help then remove the bolts from one side of each of the engine mounts and jack it up . With the mounts detached the unit will rise up easier.
Looks like you only need 1 more inch of clearance so you will have the pan out soon.

It's so close to being free, but "no cigar" just yet. I'm glad I have a lot of time to do this!
I'm not too familiar with where the engine mounts are. I see there is one big one in the center of the front part of the sub-frame. I've tried both with and without jacking the trans, but like I said, it seems to me that it just lift the whole car as opposed to just the engine/trans.

You need to disconnect the mount on the oil pump side and jack up from under the pan. ( put 4 bolts back in - jack it up with wood under pan and put a spacer (wood if possible under the engine mount ) This will give you the last inch and you are out.
