This problem been going on for awhile on occasions. Car drive normally than it is a loss of power and responds to the throttle. Car will act like it is in Limp-mode for awhile and than it will come back to normal sometimes while driving and sometimes after turning the car off and either restart or let it sit for awhile. Very random.
Not sure if it is associated with above issue but this happened a couple of times also when the above scenario occurred while having the AC on it will all of a sudden change to full hot without touching anything on environmental panel.
No codes are shoving on my OBDII, and no messages on instrument panel.
Any suggestions to this issue?

Your 2001 uses the first generation electronic throttle module (ETM) which lives for about 100-150k miles then can fault. It may or may not generate fault codes when first failing.

The ETM was changed about 10 years ago to potentiometer style from the analog/brush style it came with originally, yes I have thought about looking back into it. It does almost feel that is the issue. Will look into it when back in town.
