Problem: Started getting a low oil pressure message + light for a brief second during turns, was told it was a bad sensor. A week later, my car suddenly had no oil in it after a thud on the highway. No oil leak anywhere to be seen, no burning oil. Car chokes and dies when started, found out the timing belt is slightly off the teeth of the cams.

So my S60 sat at my parent's place for about a year while I worked in Montana, I wasn't very handy with cars before (despite a love of them), but after fixing a beaten to crap truck and returning home, I feel pretty confident in my ability now and I'm broke enough where either I fix this myself, or it's no car at all for me.
The car sat practically the entire time I was gone. I came back and the coils were shot, so I did a full tune-up and an oil change in July (OEM Castrol), besides that I haven't had to do anything to it and it's run great. Three weeks ago, I started getting a flickering oil pressure light and the associated warning for a brief second when taking sharp turns. I talked to a tech, they said my oil pressure sensor was probably on the way out and that I'd be fine, but to replace it in the next few months.
Fast forward to last week, I put my foot down a bit to merge off the highway, I feel a rough thud after the turbo spools, and while the car carried on fine, I could tell something was up. After I pulled into a gas station, there's absolutely nothing on the dipstick. I don't know if my car puked oil all over the highway, but there isn't an obvious leak or wet spot anywhere from what I could tell. The car hadn't been burning oil either, although very rarely in the distant past it would burn some on startup if parked at a steep angle. Even worse is the oil filler looks pretty bad with sludge and grime--it's never looked like that, and with COVID I've driven maybe 2500 miles since July. I filled the oil back up at the gas station, put in a full tank and some fuel treatment, and, after starting, choking, and dying a few times, the car came back to life and drove fine to my house.
If I try and fire it up it chokes immediately, so I read the codes and have left it sitting. I've spent the past week reading up on the VVT system and common issues, and I took a trip to the junkyard next to my house to pull some parts based on the codes + what I've read. All I've done so far is replace the oil filler cap and replace/clean the VVT solenoids. I noticed when swapping them out that my timing belt is a little off (and has 70k miles on it), so I got myself a replacement belt as well. I'm completely new to fooling around with timing belts and the cams and stuff, but I'd assume that this could cause oil pressure issues based on the engine's design.
