Cylinder order?

Just to verify what I have read from another post, the cylinder numbers on my '02 P2 run from 1 thru 5 going left to right as I face the windshield from the front of the car. Is this correct?

Yes, you are correct. However, in car talk terminology, #1 is on the RH side OF THE CAR.

Is "car talk" terminology always as if you were sitting in the driver's seat?

#1 is always closest to the crank pulley. No matter where you or the engine are sitting. I guess that's "engine talk" terminology!

Yep. For instance, in the U.S., the driver sits on the LH side of the car. Hence, our cars are known as left hand drive cars.

Correct. So the part of the steering wheel you look at, is the rear of the steering wheel.

There is a complication. When referring to engine parts, it is sometimes the case that the parts are referenced to the engine compass. This gets nasty confusing.
