after disconnecting the u joint I'd test the steering wheel again for sticking points. But as far as I understand, before detaching the u-joint column, the steering wheel must be locked and not turned until it is reattached, so as not to damage the SAS sensor. There are many more. Cruise Control status, Engine RPM, most importantly, torque control/torque reduction, without a reply from the ECM with the changed torque it will likely go into limp mode(not confirmed tho).

Check thermostat first. The other thing I would check is EGR, maybe exhaust gasses leak into coolant through there.
I recently repaired such an XC90 and those things take a while to get to temp.

I would be very happy for a dump of that 2008 updated ECM, and if you have, an ETM dump too. Here is the dump from the ecu's I have. Have not dumped the ETM yet.
