engine does'nt seem to heat up

hi all, i am wondering if anybody can help me ?????????????
i have a p reg volvo s40 with the t4 type engine. the problem that i have is now the colder weather has arrived the engine does'nt seem to heat up. i have replaced the radiator and thermostate this year. if i start my car on the drive and let it run the temperature gauge comes up to the normal position. then when i get in it and drive it with the cooler air coming in through the grill the temperature gauge goes down to not reading any temperature and i cannot get heat out of the blower, it is also letting the car think that it is cold as the automatic choke cuts in again. if i stop at traffic lights the revs will be just over the 1000rpm, within 40 seconds the temperature gauge will start to rise again and the automatic choke turns it self off.
hoping that this makes sence to somebody because it does'nt to me.

Have you checked your coolant level when this started happening? I figure, go for the easy stuff first.

Also, when you replaced the rad and thermostat, did you burp the system?

yes i have checked the coolant level and yes she was burped
