I have a 2007 S60R that I bought new, back @ the end of '06. For the most part I absolutely LOVE the car. One little annoyance is that it seems to go through a fair amount of oil. I have approx 56,000 miles on the car, and have probably had to add upwards of 15 quarts of oil since I've owned it. There does not appear to be any leaks. I've never seen any smoke (of any color) coming from the exhaust. I have noticed what I believe to be a trend. It seems to me that it oil level warning light come on after doing lengthy highway drives- like 400 mi. over the course of a couple of days. I don't drive the car overly aggressively. Typical highway speeds of 75-80mph.
I've never had a car that has gone through oil like this. I've continually raised the issue with my dealer (purchased and serviced religiously at Lovering Volvo in Concord NH). At first my dealer said that it was normal for this to happen during the break in period. After it continued they told me that they'd get the Volvo engineers involved but never came up with any solutions or causes. Now they are telling me that this is normal. Every time I see someone with the same car I ask them if they've ever had to add any oil, and I have yet to find anyone who has. I'm just curious to see if anyone has had the same issue that I have. Should I continue to push the service guys or just accept that this is how it is going to be with this car.?

I understand that your service intervals are 7,500 miles. With that mileage on the car I would have thought no oil would be needed between oil changes.
UK service intervals are 12,000 miles and it may be necessary to add some oil but not the quantities you are using.
No newish car should use that amount of oil with normal driving. I would keep at them as there is something definitely amiss.

My 01 V70 T5a with 104K miles on the ticker goes through about a pint in between changes (7500 mile). It used to be less than that.
