Don't gun it with the MAF unplugged; it is meant as a "limp mode" only and it's only guessing as to the amount of air that's entering the engine, and dumping in fuel to compensate. You'll burn up your catalytic converter.
Did you let the sensor dry before plugging it in? Touch the sensor at all with anything? Are you sure all hose connections are secure. Sounds like you might have killed the MAF sensor

Check hose clamps, etc first. It may be reading fine but confused due to an air leak at the idle control valve or something.

does the MAF sensor start to go bad or go bad all at once and if its starting to go bad will it throw a code. i have never had a check engine light on. but last time i unplugged it and forgot to hook it back up a light came on and i had it reset they also said i had a bad o2 sensor... how come the o2 sensor never sets the light off ? do the check engine lights in these cars only come on when something completly fails and how do i reset the codes myself i dont wanna go to pep boys and wait a hour for them to do it

The CEL only comes on if a fault is detected in multiple instances.
In the case of a bad MAF sensor, it will not always trigger. Usually a bad one of those exhibits the symptoms just like you described, or your car just won't run at all.
MAF and O2 sensors rely on each other's readings to manage the air/fuel mixture into the engine.
Here is how to check and clear codes on your model:
