Need adhesive recommendation
My wife's 2001 V70XC has one of those aftermarket glue-on trim kits. There is a place to the right of the gear selector (see pics) where the corner of one of the pieces is starting to pop up. What glue should I use to fix this and how can I clamp it (or the equivalent) while it dries???

Goop can be purchased at Lowe's etc. Automotive Goop is very effective for this application and will not release under the high temps inside the car. I have used it to glue electrical components to the windshield of pursuit vehicles.
As with any adhesive make sure no one has sprayed any interior detail or silicone spray in the area that gets glue. A quick wipe with isopropyl alcohol and a few seconds to dry will help the application dry.

Never heard of Automotive Goop. Is it quick set? How would you suggest I clamp it while the adhesive is drying?

I would use automotive silicone stuff is VERY strong after it dries
Lay a brick (literally) on it for 12 to 24 hours

I would use painters or duct tape and let it set for 24 hours. It will be somewhat strong in 2 hours but give it the full 24. A weight like JRL suggested is a good idea. Don't worry about any extra splooging out as it removes easily after the rest has dried.
Unless you remove the panel first you may want to tape off the tan side panel to keep the glue off of it while you put it in the gap with a popsicle stick etc. (A zip tie makes a good mini spreader as well.
