For what it's worth, I put a POS no-name reman MAF from O'Reillys in our T5 30K miles ago, car has about 213K on it now.. Zero problems with this MAF so far. However I did do an adaptation after I changed it. I know the consesus is to use bosch, but since you already have a generic one in there you might try an adaptation as well as a NEW set of plugs, gapped correctly.
Are you sure the connection and cabling for the MAF are good? Any CEL? The symptoms your describe are not typical of a dud O2 sensor, moreso a vacuum leak or a MAF signal that the ECU doesnt like. MAF is easy to isolate though, just as you did before, start the motor up with the sensor disconnected. Given your miles an O2 is a good idea, but I doubt it going to remedy the erratic running you are seeing,
