I always thought this was a Volvo quirk but when I start my car in the mornings and at the end of the day (after long intervals of not running) the engine knocks. Not long; only for a brief second.
I have my oil changed regularly, so I know it's never low on oil. It does burn oil fast; I use 20/50 synthetic Valvoline. Any suggestions?

Engine knocking is an early indication of engine failure as the parts are now loose enough to knock against each other. Some other conditions cause engine knock like excessive carbon on the pistons and this can be cleaned chemically.
I believe 20/50 is the wrong oil for this motor as most Volvo's prefer a 30 weight or 40 weight for the older ones. Please check your owners manual and use the right oil. Using a synthetic is smart but if it is burning oil and knocking I would want to know the cause.

Switch over to this 10-30W or 15-40W depending on your weather and your knocking should go away unless your knocking is much louder than what is perceived from your description which means main bearing or lifter issues

It's knocking because you're using 20W50. That's WAY too thick on a cold start for a car this new. That knocking is the lifters crying because they're starved for oil on a cold start with thick oil.
Go down to a 10W. -30 or -40 is your choice - 30 is fine for most applications. Mine likes 5W even more in cooler weather. 20W-50 is for old cars built in the 60's and 70's.
Volvo's don't really burn oil; they leak it. Everywhere. Get up underneath the engine and look for any obvious leaks - they don't always touch the ground.
If it is burning oil...visibly...you most likely have a clogged up PCV system.
