2006 S40 2.4i Overheating and stalling but cools down fast

Hello everyone,
Today my S40 just developed a really odd issue. I was on the open road going with the flow of traffic when the temperature gauge jumped from 1/2 where it normally is all the way to being fully overheated in a few seconds. The dash message instructed me to pull over right away. I pulled off the side of the road and the car stalled. I turned it off, removed the key, then turned it back to on without starting the car. The temperature gauge was right back at 1/2 as it normally is when the car has been running. Just to be safe I waited a few moments before starting the car again. I was able to start it but the idle was rough, I let it run for a moment and the same thing happened all over again. I can hear the fan going and my fluids seem to be fine, the outside temp was around 60F. Any ideas?
