2000 S70 p1670
Previously I thought my p1670 issue was due to corrosion. When I cleaned it, it seemed to go away for a bit. Now I'm wondering if it has to due with my key turning in the ignition. Specifically when I turn the key it goes past the 0 position, almost doing a 360. Thinking I should just replace it?

That would make sense that an ignition switch problem would pop your code. When the key spins around in the cylinder it is usually the mechanical portion of the switch that is bad and it is a bit of a challenge to change on the S/V series cars. In order to keep the keying the same you will need to order it through a dealer along with the VIN number. I would go ahead and change the electrical portion while you are at it.
We have a writeup on changing the switch in the repair database.

So simply changing the immobilizer won't work? Is this the lin you are referring to? If the key turns nearly 360 deg in the ignition, the mechanical portion of the switch has failed. This is the preferred failure mode, because you can still start the car (a common failure is a piece of the steering lock "guillotine" mechanism breaking off and jamming the mechanical portion of the switch).
There is good information on this site on how to replace the ignition switch. It is a dealer-only part that has to be ordered from Valeo in Germany and it is matched to your VIN.

The repair database link you have is for the electrical portion of the switch. The mechanical portion is covered in this one:
