The ETM light (actually ETS on dash) is telling you there are faults in that system so

Have you tried unplugging the MAF to see if it runs and doesn't stall?
No I'll try that after work.

I don't believe this is an ETM fault. No ETS light while engine is running means no fault in that system.

I agree with checking the MAF by disconnecting it. The car will run with default airflow values and should stay running if the MAF is at fault.

Car still immediately dies with the maf sensor unplugged

Well MAF is in the clear  Can you hear the ETM starting when ignition is turned on? It should run for approximately 6 seconds and click to the off position while ignition is in PosII (no cranking)

yeah when I put the ignition into position 2, you can hear the click and electric whine. I haven't payed attention to how long it lasts but it's there.

If you have access to a 'scope it may pay to look at the cam and crank sensor wave forms.

I would assume you've already confirmed that you've got spark and your injectors are firing; if not, then you may want to verify those two things while sourcing the scope and split connectors
Example of Precision: Measure with a Micrometer, mark it with Chalk, and then cut it with an Axe.
Disclaimer: We (very) seldom do that

yeah I mean the car will run smooth and perfectly for 10 or 20 seconds before dying. It doesn't struggle to run when it IS running.

What is weird is that once it dies, if I try to crank the car again, it simply will not start at all and won't sound like it's attempting to fire either.

If I come back 2 or 3 or 10 minutes or so later, the car will again fire perfectly and run smoothly for just a small window of time before dying again.

stupid question: when you're trying to start again and it doesn't sound like it's trying to start, what's happening? do you see lights on the dash flicker? do you hear the starter and relay clicking, or making any sort of noise?

yeah starter is turning it just never actually fires or shows any sign of firing, not even a little stumble or anything.

I haven't checked to see if the dash lights flicker though.
