I'm thinking of swapping some cleaner 15 or 16 inch wheels out for something nicer.
Will wheels from later Volvos fit the 850?

in my opinion, the 850 turbo wheels are one of the best looking when it comes to cheapest in price. they are 16 inch wheels, so you wont be sacrificing comfort while gaining a little bit of better handling and performance.
Of course you can always get the volans or pegs, but they are more money and probably cant take as much of a beating the 16 inch can take.

I would just check out your local craigslist ads. Typically you can pick up 4 rims with tires for around $250. C70 and S60 rims will fit as well, but be careful on the tire size. I think anything wider than a 205 will rub on the front of the 850's.

I got S80 interceptor 17 inch with 205/50R17 tires. Got the wheels for $60, they work and drive good.

205/50R17 does not rub with my new suspension. 215/55/R16 also did not rub.
But I have coil over to raise my car so nothing rubs. With lower purple springs and then the stock old/tired springs, front tires would rub the fender liner every time going over a bump or a drive way with any angle of incline and 5 mph or above. I was so sick and tire of it so I raise my car. Purple springs rub worst than than stock springs, but stock wasn't much better.
215/45R17 with lowered purple spring and bilstien, that is how I bought the car.

215/55R16 with ksports coilover and raised, rubbing was eliminated.
I do recommend kspots coilover to anyone is looking into raising their car with it. http://ksportusa.com/products/coilovers/kontrol-pro/ Car rides good. Front was a drop in, I had to add spacer, bolt, and a nut to the rear stock spring to raise the car since the coil over really is made to lower the car, not raise it. I am very happy with the ride quality, car height, and non rubbing.

As a bonus, ksports coilover kit comes with chamber plates that gets ride off the annoying strut plates that keeps breaking every 2-3 years. So, no more broken strut plates for me... EVER. I gone thru 3 sets, even a IPD HD version of it, since I own the car last 7-8 years. Every time, struts have to come out, alignment have to be done. That's $300-$400 just in alignment!

You've got the package and it does shine. I probably wouldn't invest that much but would like a better ride.
My 855 currently has 16 inch wheels, two of which are no longer attractive. But also the car rides hard. It probably needs shocks and struts a project for next spring. But thinking about this, if I want less ka-thunking, better shock absorption, should I maybe go with higher sidewall tires — 15 inch wheels instead of 16's?

Focus on the strut/shock/springs first, then the wheels/tires.
My 205/50R17 tires ride the same as the 215/55R16 tires I had. 205/50R16 should be a fine and comfortable tire for you, and you shouldn't have issue rubbing, if the strut/shock/spring are not worn out.
