Thought I had the information, believed I saw it on MVS.
How can I tell other than the engine # which valve stems I have

Find your engine number and refer to the numbers above. 7mm stem is the lower range and 6mm stem is the higher number range.

The number will be on the timing belt cover if the label is still there.

No numbers on cover, can one check a number on the vin or something somewhere else

so one needs the vin it seems
no other way to tell?
What differences are there on the engine, they are both vvt
are the 8mm valves sodium filled and stronger, or heavier or both
which is better?

I also am looking at timing belt water pump combo kits, the ebayer is selling them and will fit all the whiteblocks. Guess this is true.
Don't really care to skimp on water pumps and timing belts. What is the recommended?
