My electric fan only runs after I turn off the car when it's cold outside. I could be doing 90 on the interstate on a 70 degree day and nothing strange happens. But I've noticed in the last few weeks that going 70 on the interstate when it's below 45 degrees, after I turn off the car the auxiliary fan still runs. Why would it do that? Any help appreciated.

I assume you mean the engine cooling fan at the radiator and not the cabin fan. Usually when the radiator fan runs on like that it is due to a bad Engine Coolant Temperature (ECT) sensor. How is the temperature gauge on the instrument cluster behaving? It should go to the 3:00 position and pretty much be pinned there.

SOP is to replace both the thermostat and the ECT sensor at the same time if either goes bad.

Yeah sorry, I was referring to the radiator fan. The gauge does indeed stay on at the 3oclock position. I was thinking the ect as well, but I just find it very strange that it only runs when it's cold and not when it's hot. Would it really have a reverse effect if it's going bad?
