If you look around this site you will find that Uro brand parts are not highly regarded. That said, I would look at the cost of the components for the breather box and the manifold gasket, the hoses to the block, and do the high volume mod (cn90) using regular hose.

Well I finally decided to pony up and handle this job, as well as all the vacuum lines. I did the heater hose "upgrade" as described in the above post.
Now that everything is together, funny things are happening. When the car is started, it idles smooth. No alarming issues. When revved, the throttle response is a bit sluggish and the engine shudders a slight bit, but only for a moment before revving up normally. The RPM's build up as normal and the boost seems to be building nicely.
When I put the car in gear it has a random stutter every few seconds, but otherwise seems okay. A drive around the block yields poor throttle response and a lot of difficulty accelerating. Back in the drive way and out of gear, it returns to its smooth nature.
I'll be responding with codes later, once I find my scanner. Meanwhile, anything I should look out for? I already know to check the coil area for arcing once darkness falls.

Complete evaluation of coil, cap rotor plugs and wires - how old are they, or is age unknown?
The idle air control valve (IAC) needs to be removed and completely cleaned with solvent
Finally, remove the throttle body and look for gunk around the throttle plate - it should be shiny brass clean.

Since you got the car with the intercooler disconnected, I'd check it's state as far as leaks go - someone wouldn't disconnect it unless they needed to. You very well may have a really bad leak in the intercooler which could cause some of the issue.

I'm doubting boost leaks of any kind, considering the charge pipe coming from the top of the intercooler swelled up a bit under full boost.
That said it never hurts to check.
Next step will be replacing cap, rotor, wires and plugs as suggested. I dug around a bit and found a few people describing similar issues caused by wonky ignition.

If it doing this on all three MAFs ... look for bad electrical connections. P0102 is MAF low input, which can be cause by an excessive voltage drop across a bad connection.

So I popped the hood while the engine was running last night. Coil checked out fine. There was no ignition spark leak but lo and behold, there was some blue spark action jumping out of the distributor cap toward the middle wire connector. I'm sure it could have been damaged one of the few times that it was removed/connected throughout the repair process so far...
I suppose I'll be replacing that and reporting back soon!

UPDATE:
Cap and wires replaced. Car runs absolutely perfect. Took it for a quick drive around the block. I have to say, I did NOT expect it to have the pick-up that it has. The only other time it was driven by me, was limping it home in its almost non-running state, and then a couple of poorly running test drives along the way to check status/further diagnose. Man, what a difference between then and now. There was definite improvement over each piece of work I did.
Summary of work performed:
1. Serviced PCV system front to back, used the "5/8 heater hose" mod to replace the crappy plastic tube. Cleaned up all reused parts.
2. Replaced ALL vacuum lines. Many were rotted/cracked, some were even totally severed from their nipple
3. Replaced compressor bypass valve with good used unit.
4. Replaced wires
5. Replaced distributor cap
Next on the list is to replace the leaking heater core and some front suspension work. Finally, install this much nicer carpet and drivers seat.
Regarding front strut bushings/spring seats;
Those are the parts I should replace with ones intended for a 2003-2006 XC90, correct?
