2008 xc90 3.2L.
I'm switching out the tranny in a few weeks.
Any recommendations on using a 2 vs. 3 point engine support bar?

I have not done the 3.2, but have done the 2.9T. It all depends on the mounting points for the engine. On the 2.9T I needed three points, although some people use the two point system and get by. I was not happy with this so did some modifying. Below is a picture of what I did. It is basically a combo of the two offerings you showed, but better as the tower to tower bar also has adjustments (in picture right support point). On mine I drilled a location dependent hole on the added bar, that sits on the core support, that aligned correctly based on the 2.9T engine (in picure left support point). I used scrap wood blocks to achieve the needed height, as seen in picture, screwed together with a very long wood screw. I suppose you could nail them a level at a time if you don't have such a screw. I attached the added bar with a lag bolt into the wood and a longer bolt and washers into the red bar so that the third leg stayed in place. I then used the bar's hardware as shown in the picture. It can all be taken apart and stored as the original Harbor Freight bar is not altered in anyway.
