So I was just wondering what oil everyone uses in their S80 3.2.
This is the first car that I have owned where the manual recommends different oil viscosity based on ambient temperature.
My first oil change after buying the car used with 140k, about 1.5 months and 5k miles ago, used Penzoil Ultra Platinum full-synthetic 0w-40 due to summer temperatures.
I was thinking about going with a 5w-30 for the cooler temperatures. Thoughts?
What oil do you recommend? 2007 S80 3.2

The first thing to think about is that the number in front of the "W" is the the number that you want to look at for cold starts.
The second number (after the "W") is the number that you want to look at for when the engine is at its operating temperature.
With that in mind if you been using a 0W oil then I would continue using a 0W oil.
In fact Mobil 1 makes a very good OW40 European formula motor oil.
I've used OW40 Mobil 1 in my B6234S (The Volvo 3.2 if you prefer) for most of the oil changes since it was new and I am at 121K and it runs like new.
Here are the specifications that I look for in a Motor Oil
MB 229.5 - Mercedes Gasoline motor oil specification
VW - 502 - VW/Audi Gasoline motor oil specification
Porsche A40 - Porsche Gasoline motor oil specification
Any 0W40 or 0W30 that meets the specs listed above should be fine
Take care
Paul
