So, attempted to buy some plywood, was going to impress my sedan friends with my longroofs ability to carry cargo and.... One of my rear seats doesn't drop. I've no idea how to even go about fixing this. Any thoughts? Does anyone know how this mechanism works?

There will be a little white nylon lever under that broken plastic that you have to put back to release the seat. Make sure to flip the seat Bottom up first, then the seat will fold down. That plastic is very brittle, I smashed mine up loading ski's and had to fix a couple years ago, I'm much more careful now.
Coincidentally, those parts are difficult to find but there is a car in the Auto wreckers here in Calgary with that, I have to go there today for a couple parts and could grab that for you if you like, same color and mail it.
You might be able to release it by folding the centre seat section forward and removing the screws for the plastic pieces (5 I think ) and accessing the seat release for that one.

I believe there is a way to "manually" release the seats by using a screw driving coming in from the hatch side just simply pry it out. Had to do that when I was ripping out a 3rd seat from a junk yard unit.
