Oh, are you asking what is the food specialty is for each state? I thought you were asking the cheese specialty for each state. I will need to think about if Oklahoma has a food specialty.

Kansas is big on meats because it was the end of the line for cattle drives, Dodge City and Abilene. Kansas City is well known for its wet rub Barbecue. The United States' first fast food chain White Castle got started in Wichita, KS. If your ever in Wichita check out NuWAY Burgers a local chain that does a real good crumble burger and some real good in house Root Beer.

Zwiebach, Bierocks, Lefse, Chicken & Noodles, Corned Beef & Cabbage, Homemade Breads, Fried Chicken, Loose Meat Sandwiches, Corn on the Cob and Kansas Dirt Cake.

The KC City strip steak. A Kansas traditional cut ripped off by some A-hole in NY and renamed NY strip.

In Dodge City I found a dish called "Meat haulers steak" its a cabbage dish.

I have not done this for decades but I use to go Foraging. You be amazed how much food is growing around you and free for the taking. If you try forging get a good gathering manual written by a somebody that knows their stuff. Misidentification can be lethal. Any mushroom hunter can tell you that.

Kansas Dirt Cake.

Ingredients.

1 cup powdered sugar
1 (8 ounce) container Cool Whip, thawed
1 (8 ounce) package cream cheese
2 (3 1/2 ounce) packages instant vanilla pudding
1 (16 ounce) package Oreo cookies ( Not the double stuffed ).
1/2 cup butter or margarine
3 cups milk

1. Mix together the pudding and milk. Chill until set.
2. Crush Oreo cookies in a blender or food processor.
3. Put half of the crushed cookies on the bottom of a 9x13 inch pan.
4. In a separate bowl, cream together the cream cheese, butter and powdered sugar until smooth.
5. Fold in prepared pudding and Cool Whip.
6. Spread mixture over cookie crumbs.
7. Top with remaining cookie crumbs.
8. Freeze at least 8 hours before serving.

The crushed Oreo cookies has the looks and texture of dirt. The frozen foam has the texture of cake.
Everybody I ever served it to really likes it.

Yeah, the Kansas Dirt cake sounds familiar now. Thanks for post recipe. For Oklahoma Dirt cake, add red coloring to the Oreos   (Oklahoma dirt is red).
