2007 S80 V8 “Oil Level Low” before and after oil change

So I am a fairly new owner of an S80 V8. Loving my car, however I’m getting a conflicting warning message about my oil being low. I had the message pop up not too long ago and was going to top it off, but waited a little to just take it to the mechanic for tires, tpms, and oil change. I get it back and it’s running great. However I noticed after about 10 mins of driving it still says “Oil level low”. I got home and checked the oil… normal halfway on the dipstick. Then I wait till it’s cold. Normal. The only thing that tells me that it’s not a sensor issue is that my car runs perfectly fine and the message only comes up after driving for a little bit. Also I took a look at the service receipt and it says they used 7.2 quarts of oil. And I believe the capacity is ~7.5 quarts. For the record I am approaching 230,000 miles with a very well done service history. The previous owner did early oil changes and maintenance keeping it in great shape for the miles. Any ideas of what could be the issue here? My ideas are either the fact that only 7.2 quarts was used (wouldn’t make much sense unless these engines have an early warning for low oil) or a sensor (really hoping not as I’ve already dumped almost $1500 into this.) I am thinking you have a failing low level sensor or wiring connection. The dip stick check is the 'ground truth' here.
Wiggle the wiring and watch for changes.

Sorry if I assumed you had/did not have mechanic skills. It is difficult to advise when I don't the background of people.
Perhaps others can provide a photo of the location of the oil level sensor. I do not have your model Volvo.

Thanks. I made a post on swedespeed the other day but have yet to get any replies. I’ll check that post out. And no worries about the assumption. I’m not a mechanic but I do have an interest in learning that trade. If it ends up being the sensor itself I may just end up having me and my buddy replace it on our own as I’ve already dumped more money into this thing than I want to admit haha
