Good afternoon,
Previous owner of older volvo models from 1980's and early 90's. Been away from owning Volvo's a while but impulsed bid on a 2006 C70 T5 yesterday and won. I now need to go pick it up at the auction house tomorrow. I have videos of it running and the only issues listed are that it overheats. I do not have a vehicle dolly and unfortunately uhaul wont let me reserve one with my 2017 Chevy Colorado to tow it home. What recommendations would y'all suggest for a quick troubleshoot. I do not want to run it hot and risk blowing a head gasket, but I'll have to somehow get it 3 hours home. Suggestions??

I would rent a UHaul truck and trailer.
The P1 platform (S40, V50, C70) 5 cylinders are prone to head gasket issues if run hot. There is no coolant level sensor and due to location of temp sensor can get hot quickly before the driver know it and toast the head gasket.
While you could top off and closely watch the coolant level I wouldn’t risk it. On my 08 C70 one of my first to-dos was changing all the cooling hoses and thermostat housing. Plastic bits they used in that design are prone to breaking and leaking with age.

+1 on this. Just had the similar symptoms on an 06 V50 T5 AWD. The owner was having overheating issues. As a start we swapped the thermostat. The old one was jammed shut and there was no jiggle valve in it either. It was an aftermarket item. This is not a fun job as getting the airbox out is a challenge in itself requiring 2 people, a long pry bar and disconnecting the RHS engine mount to be able to push the engine rearwards enough to get the airbox out. Once out, the thermostat unit is just below it on the front on the engine.
Next thing to check would be the cooling fan is operating.

Yea, I busted the passenger side tab of the airbox trying to squeeze that thing out, seemed ok without it. Good news is once it is out you have pretty good access to the octopus hose that is a major leak point in the system.
