Soft brakes

I have a 2002 S60. Last week I noticed that suddenly the brake pedal would slowly go to the stop if I kept pressure on it while braking. The car would stop, but the pedal would not give me any back pressure, even after pumping it a few times. I replaced the master cylinder and bled the brakes. Now, the brakes feel nice with the engine off, but when the engine is on, and the vacuum assist kicks in, I still have a pedal that goes to the stop. Ideas?

Bleed again.
If that doesn't work you may need a new booster

Wouldn't a failed booster show up as the opposite problem, with the brakes suddenly feeling very stiff because they've lost the power assist?

Not necessarily- depends on how it fails.
