Can you add DSTC (stability control)?

Everything on the Volvo S80. Sometimes called an "executive car", the S80 was Volvo's top-of-the-line passenger car. P2 platform.

I'm thinking not, but is there any chance you can add DSTC to an S80 that only has STC?

No you can't...if you really feel you need it, you should sell your car and buy one that has it.

So I can't buy any modules or sensors to add it?
