'92 850 2.0 20V Intake Swirl Flap. Missing solenoid, do I lose a lot of power?

You will have the same results as leaving it as it is...because ecu is programmed to have variable intake.
You will need to tune the ecu to run the engine without it.

Pretty sure.
Without it...ecu will set CEL and disable or disturb the fuel trims.

Does the car have MAF on air filter housing or just IAT sensor like 10v cars?

It does have a MAF on the air filter housing, yes.

Try with a regular intake manifold...you have nothing to loose...it can't be worse.

That is true. I will swap them. Is there any scientific test I can do to check if it is better or worse?

I don't know...i think that variable intake is there to provide more torque in lower rpm.
Not really sure what is it's purpose since all other engine managements don't have it.
Maybe Volvo solved that with different software.
