Can one of the pros chime in here please? I'm surprised there isn't more interest in the steering components areas, i.e.: rack, u-joints etc.
I'm using a post by MIJ ( I think ) and haynes... to moderate success.. that is I'm stuck.

I was also going to attempt to remove the rack in case what's causing my poor steering in the other car is its rack. But if I can get these u-joints out I might be satisfied.

Imagine a straight cylindrical shaft (like a long rod or pipe). When you rotate it, the whole thing rotates. If you need to "bend" your shaft, you cant rotate it anymore because of the elbow (where it's bent).
So, any place your shaft has to bend, there must be a flexible joint. You can have as many u-joints as your path needs to bend around objects.
On something like a RWD driveshaft, these joints are in place to allow the rear wheels to move up and down on the springs. In that case, two U-joints are used to keep the input end and the output end parallel, but allow them to "float" up/down.
