I'm guessing that the reason we can't find 10w50 any more is thanks to the Federal Government. The same group I can thank for ruining all my carburetors due to their alcohol in my gas... my new dishwasher that requires me to wash by hand first.. my new detergent that doesn't get stuff clean... and the low flow toilet that needs to be flushed three times.
Thinner oil = better gas mileage.

I absolutely agree that "better mileage" is a key component to going to thinner and thinner oils but there are many factors involved in the weights of oils that are available.
Truth be told, I don't think I've ever seen 10w50 sold in any store here in the US and I've been changing oil since early 80s.
Back then I did use 10w40 a lot and that variant has become harder and harder to find.
yet, 0/5w40 is quite easy to find now and probably didn't even exist back when I was using 10w40 because the oil technology couldn't make a 0/5w40 possible.
The 10w60 I referenced is a special Castrol racing oil that I would not recommend for you situation. I only mentioned it because of the high second number.
Also I think oil has gotten better in general over the years and engine design has changed so oil can do things now that weren't feasible 20 years ago.
The good news is there are plenty of easy to find oil choices for you if you want to bump up to the next viscosity level. ie: a xW-40.

OK, sports fans. I have the answer.
First I would like to thank everyone that shared their thoughts.
It seems that it was, in fact, the oil pump.
I got my eBay replacement today - same older style as the original (a newer model superseded this one at some point). The old one show some scoring on the inner gear on the engine side of the pump.
The old one - cold, idle, 90psi, needle fluctuated. Good and warmed up - 25psi, needle fluctuating +/- 2psi at that cadence of maybe 250 bpm versus the engine idle of 840 or 870rpm. Rev to 3000, warmed up, 90psi.
The new one - cold, idle, 70psi, needle much steadier, and the wiggle that is there is much more rapid - like in tune with the rpm of the motor.
Good and warm - 30psi, steady needle. Rev to 3000, warmed up, 70 psi.
Now only a couple more things to do - the timing belt is making noise and wobbling (replaced 4 years and 40k ago) and the oil cooler hoses are leaking at the crimp joints (replaced at the same time as the tb/wp kit).
And so the next poor b__tard that is struggling with this, I am going to put some key words below for the benefit of Google.
