As far as the temp needle going low on the highway and coming back to normal in stop & go, that's a classic failed thermostat stuck open. Easy fix, just be careful to not strip the bolts. My other advice would be to return/not install the Autozone ECT sensor. Use only OE parts for stuff like tha...

Classic thermostat stuck open. In my case it was wide open on a 98 S70 T5, meaning no thermostat. Took awhile to figure that one out after purchasing it, also at $500 but with 230K miles.
