EDIT: I forgot to mention my current trans slips a lot around 3rd gear. I installed the B4 servo cover but the issue remained.
My car also has new brakes, axle, ignition coils, spark plugs and tires. I don’t really want those parts to go to waste so that’s also a factor.

My thoughts on wheels... black or white have been played out. They've been on everything, stock, aftermarket, you name it. Back to classic gunmetal or silver IMHO. Here's what I like:

S60 03' Best 16" rims and best spoiler
I have a 2003 Volvo S60 that now is a running project car so I want to move on to looks. I was thinking rims (Only because when the tires were replaced the factory ones were torn up.) I was also thinking a spoiler just for looks I guess and maybe some better fuel economy?

Car is fixed and working perfectly again. Thanks for all the amazing help and suggestions. I’m just going to buy 4 more coils as someone said above since all my coils are so worn I can’t even read the part numbers anymore.

mrbrian200 mentioned that there are coil pack grounds that can get poor electrical connectivity. I think in addition to the bolt that holds each coil pack, that there are two other ground bolts near the coil packs. One is for coils 1 and 2 while the other is for 3, 4 and 5. So cylinder 1 and 2 aren't firing, but coils and plugs are apparently good.
Evaluate signal to fuel injectors 1 and 2
Evaluate wiring to coils 1 and 2
You can try swapping fuel injectors , too, but it's more work than coils

How did you clean the injectors? I got a flashing light when one injector was kaput after I soaked it in acetone

The fuel pressure is about good, not sure about the Duralast brand, maybe try a few used Bosch from the junkyard
