Moisture in the oil

I purchased a 97 Volvo 850 with 108k miles. We replaced the water pump because of a very small leak, they replaced the timing belt at the same time. We also noticed that the oil looked dirty, we had the oil changed. The volvo dealer said everyting looked good. A week later when I checked the oil it looks like there might be moisture in the oil. It looks like wite bubbles on the dip stick. What could cause this?
