Regarding a 1997 850 non-turbo, 2.4 litre engine.
The water pump seized up, causing the timing belt to jump off,
which damaged the head.
The head has been machined and fixed and is ready to be put
back on.
We need to take the water pump off and then replace the
water pump, timing belt system, and head.
First, since the crank pulley would come off to do the timing
belt replacement, an issue is how to note and preserve the crank timing position.
Then, removing and replacing the water pump.
Is there a tutorial for this?
I have downloaded the 1995 Volvo 850 Auto Engine and Transmission Removal
tutorial. But is there something specific for the water pump for
the 1997 model 850?
If the engine could be removed without too much drama, that would
allow easy access to replace the water pump, timing belt assembly,
and put the head back on. But is that feasible: removal out the
bottom or through the top?

You don't have to remove the crank pulley to replace the water pump and timing belt. On this forum at the top (database repair) their are great post, some with pics that can assist you. If you need more, bay 13 or IPD sells a DVD Timing belt instruction.

+1 on the above. The water pump comes off with a simple 12 mm articulating ratchet. The crank pulley does not need to come off ever. Remove the metal cover on the bottom front (2-10mm I believe) and move the belt in moving down from the rear and above (about 9:00)and then get it in and above the post that is behind the pulley at about 6:30. I just did one of these on a 96 N/A yesterday

Note that OP said the head is off. So the timing belt is already off too. No reason to touch the crank pulley during reassembly, just line it up on the timing mark and then put the cams in the proper place after putting the head back on. See the pinned head gasket tutorial.
But while the head is off, remove and change the water pump as gilhuly describes. There is nothing specific for the 97, a guide for the 95 will be entirely appropriate. It will be a pain to clean the surfaces but do it carefully, then replace the pump. Do all of this while the engine is in the car.
Removing the engine is easiest out the top, with the transmission attached, and includes a lot of drama. I wouldn't go there.
