About a month ago, I started getting intermittent warnings when I'd first start my XC-70. They have continued sporadically. When it occurs, it is always when the engine is stone cold (sitting all night). The triangular emergency light illuminates and I get a warning message "Coolant Low; Shut Engine Off Safely". The first time this appeared, I immediately shut down and checked under the hood. All levels were perfect. The next time (and all subsequent occurrences) I've done nothing; the warning stays on for about 20-25 seconds and thereafter all displays are normal.
I'm tempted to simply ignore this as a Volvo anomaly BUT warning systems that are erratic and ignored can lead to big problems when there really is a problem present.
Has anyone experienced anything similar and, if so, do you know of a remedy? Thanks.

Sensor is very likely faulty. Should be an easy replacement and not too expensive.
The sensors "fail safe" meaning when they wear out or break they falsely indicate an empty fluid condition instead of falsely indicating a full condition.

Might just be a connection/wiring issue....Fazool is correct in that if the circuit is open, the coolant is considered low.
Lift up the coolant expansion tank to reveal the cable underneath for the level sensor. Sometimes the connectors on the bottom of the sensor get exposed and or come loose, so so give it a good visual inspection. Also follow the wire back along the loom to its connector, clean this with contact cleaner and "exercise" the connector to clear oxidation.
