2004 s60 sudden loss of all dash displays and door locks
I have a 2004 s60 that ran fine until this morning. It has needed an oil change for a while and a display warning that says my position light is out when it isn't, but we figured it was just a loose wire. This morning the dash lit up when the key was put in but once we turned the ignition, the entire readout died. What the heck is wrong with my car?

That is the symptom of the low speed network being offline.
Fault codes read out of the car with a fully capable whole car scanner can be the most help with knowing why the network goes off. OBD-II code readers are not going to give you this info.

Like previous poster, if the door locks also don't work, it's possibly a network communication issue. First thing, reset the ecu by unplugging both terminals at the trunk battery for 12h or more.
Then, the CEM is a good (common) point to start. If it's only the dash that's dead and everything else works well, it can be the dash itself (another common and costly issue, although some places can fix it for a few hundreds)
