New MAF, black smoke and stalling.

You have few possibilities here:
-bad maf right out of the box(less likely)
-huge vacuum leak somewhere(more likely)
-bad maf sensor's connector(common fault on these cars)

Since you have been driving the car for some time with bad Maf,your o2 sensors are fouled with soot and not able to work properly.There is possibility that Cat is also clogged.
It was zip-tied with the old MAF which I had to cut to reconnect the new one. Would a clogged cat and o2 cause the richness?

You are missing my point.
I'm trying to say that you will need to bend the Maf connector cable just like on the picture i posted and to zip-tie it to stay that way.
Being zip-tied before means that connector allready made problems in the past.Maybe the wires are shorted or cut inside and not making contact with the connector itself.
O2 sensor failure means that the car will run extremely rich,maf symptoms are similiar but the recognizable maf failure symptom is that rpm is fluctuating up & down at idle.

I'll zip-tie it in the morning, not sure if it's considered "fluctuating" as it stays around 800rpm but sounds cammed. It seems like it's a vacuum leak or the o2 from what people are saying but I'll give ziptieing it a shot.

My fault on the turbo/non turbo comment, somehow I was thinking ETMs as they need to be coming from same motors (turbo/na) and mixed here with MAF sensors. I know the differences on the 98/99 ones as I had a 98 now a 99 both cars with MAF replacement. The 98 started acting up right before a 1200 mile trip and didn't throw a code until after 100 miles highway driven. I then checked the code, disconnected the MAF and drove away.

Well, no changes. I've looked from the top and bottom and see no air leaks. I zip-tied the MAF connector and no change. The connector seems to have some goop in it, not sure what it is but there's a bit of it in the connector. Not sure what else to check.

That's anti-corrosive grease.
At this point i would remove ecu and check it's pins for corrosion.
Maf might be defective right out the box(rare,but happens)....you said there are no vacuum leaks....other than that...your o2 sensor might be bad,but only code you get is maf code.
Also check ect sensor resistance.
