I'm going to order the strut (sachs), Spring Seat, strut mount, billow and bump stop, and stabilizer bar. Is there anything else I should grab?

The bellows usually is OK but the bump stop that holds it in place has been trashed on all of them that I have changed the struts on. The bellows is very easy to inspect before you order and you can decide then.
The strut mount/bearing is a tough one to call. Good bearings are really expensive and you don't really know if they are still serviceable until you have things taken apart. If the bearings have been replaced before with something aftermarket chances are they are bad but I have had some OEMs with 200k on them and they are still good.
Several years ago everyone started to use XC90 spring seats and I think Volvo actually just discontinued the original part and superseded the part number to the XC90 version but make sure you get the OEM XC90 spring seats.
The washers, the cross shaped nut, and the other extraneous hardware can be reused. The struts typically come with a new nut for the top but I can't remember if the Sachs struts come with the mounting bolts for the steering knuckle. If they don't I would grab new hardware for the bottom mounting.
One other tip. When you install the sway bar end links jack the control arm up to a point where the stud lines up with the hole. It is very easy for that bolt to get in a bind and, even after you torque it down to spec, it remains loose and it causes a clunk on every bump.
